The aromatic excellence of Zibibbo
L'OCRA
Terre Siciliane Natural moscato
Zibibbo
The Borgo Guarini ‘raisining’ garden and its fruits within offer up emotions, and a one of a kind experience that really pulls at the heartstrings. Firriato’s L’Ocra is an extremely agreeable wine characterised by elements of freshness and tanginess, enclosed in a bouquet of fruity and floral aromas with marked scents of orange peel, roses and honey. L’Ocra is a sweet wine distinguished by its passito base, with no added alcohol or aromas. Once the grapes have reached the right degree of maturity follows the harvest, during the first ten days of September, of the grapes to be dried on the trellises. The infusion in the must follows, and then fermentation. The process produces a delicate sweet wine that is never cloying, but imbued with the marked aromatic elegance of Zibibbo.

L'Ocra
The sweet scent of Sicily
L’Ocra is the perfect and well-balanced interpretation of the Zibibbo grape variety cultivated in Firriato’s ‘raisining’ garden, an earthly paradise at the heart of the Borgo Guarini Estate. The same colour as gold, L’Ocra stands out in the field of Sicilian wine-producing and winemaking for its supporting acidity, which is gracefully and elegantly enriched by the sweetness that comes from the grapes left to dry on the trellises. It is an extremely versatile wine: ideal with any meal and the perfect accompaniment to traditional Sicilian desserts. Its reduced alcohol content enhances goat’s cheese and smoked fish, evoking through the nose memories of the sweet scent of Sicily. The Borgo Guarini Estate where L’Ocra is produced is just a few kilometres from Trapani. It is a place that demonstrates its lasting connection to the earth with its farming tradition. The landscape is one of nature in perfect balance, where human hand is an attentive friend, respectful of biodiversity

Apricot Tart
Mix together all the ingredients except the jam to make a pastry and leave to rest for a couple of hours. When rested roll out the pastry to line a tart tin about 1cm high. If there is any pastry left over, use it later to decorate the top.
