The aromatic excellence of Zibibbo
Terre Siciliane Natural moscato
The Borgo Guarini ‘raisining’ garden and its fruits within offer up emotions, and a one of a kind experience that really pulls at the heartstrings. Firriato’s L’Ocra is an extremely agreeable wine characterised by elements of freshness and tanginess, enclosed in a bouquet of fruity and floral aromas with marked scents of orange peel, roses and honey. L’Ocra is a sweet wine distinguished by its passito base, with no added alcohol or aromas. Once the grapes have reached the right degree of maturity follows the harvest, during the first ten days of September, of the grapes to be dried on the trellises. The infusion in the must follows, and then fermentation. The process produces a delicate sweet wine that is never cloying, but imbued with the marked aromatic elegance of Zibibbo.

The sweet scent of Sicily
L’Ocra is the perfect and well-balanced interpretation of the Zibibbo grape variety cultivated in Firriato’s ‘raisining’ garden, an earthly paradise at the heart of the Borgo Guarini Estate. The same colour as gold, L’Ocra stands out in the field of Sicilian wine-producing and winemaking for its supporting acidity, which is gracefully and elegantly enriched by the sweetness that comes from the grapes left to dry on the trellises. It is an extremely versatile wine: ideal with any meal and the perfect accompaniment to traditional Sicilian desserts. Its reduced alcohol content enhances goat’s cheese and smoked fish, evoking through the nose memories of the sweet scent of Sicily. The Borgo Guarini Estate where L’Ocra is produced is just a few kilometres from Trapani. It is a place that demonstrates its lasting connection to the earth with its farming tradition. The landscape is one of nature in perfect balance, where human hand is an attentive friend, respectful of biodiversity
The characteristics of vintages
Mild winter with appropriate moderate rainfalls and mild spring eased the regular vegetative process of the vines. Fortunately the lacking of precipitations over the springtime and the heat wave of the first part of June did not make plants undergo water stress. Broadly speaking, this climate situation brought to a regular vegetative process and vines came to harvest time in extraordinary conditions.
The summer season 2016 has been characterised by mild cimate, few rainfalls without excessive heat. After a winter characterised by few rainfalls, spring season began with cool temperatures lasted over flowering until the months of May and June when spring concluded with some rainfalls. These climatic conditions fostered a great vine life-cycle in the vineyard.
Complicated vintage, fall 2014 is characterized by hot weather and few rainfalls. These climate conditions caused the appearance of remarkably reduced natural turfing rich in microterms ( species growing thanks to low temperatures). Natural and cultivated seed plants seem to be in late. Winter beginning is cold with strong spore abatement due to the huge humidity of spring 2014.
A Memorable vintage especially thanks to the uniform climate conditions: rainy spring and fresh summer ease slow and gradual ripeness. The particularity of summer is linked to the lack of Sirocco. July does not achieve heat peaks. At the same time marked temperature fluctuations between day and night concern all Firriato’s estates triggering aromas and fragrances development.
Mix together all the ingredients except the jam to make a pastry and leave to rest for a couple of hours. When rested roll out the pastry to line a tart tin about 1cm high. If there is any pastry left over, use it later to decorate the top.
