Blend of native Sicilian grapes
Charme Rosè is the delicate gift that Borgo Guarini reserves for lovers of Sicilian native vine varieties. On some slopes of this hill, immersed in the Trapani countryside, native Sicilian black grape varieties are selected and harvested slightly before they have fully ripened in order to protect their aromatic properties and acidity. The regular vinification of the white grapes comes into brief contact with the skins of the black grapes giving the wine its characteristic, pleasant pink colour. The successive sparkling process, where bubbles are introduced to the wine in an autoclave, enhances this union making Charme Rosé so shiningly extrovert. Its silky bead introduces enchanting aromas that are enhanced by its fresh, fragrant flavour: a wine full of character, it is the ideal accompaniment to carefree moments.

The Borgo Guarini Estate is a high hillside area which slopes down to the flood plain of a stream. This area is distinguished by the complexity of its soil and climate conditions, which vary from area to area, and its orographic variety.

Intense notes and a refined bead for a native Sicilian blend
The cultivation of vines on the Borgo Guarini Estate allows the study and experimentation of the microclimate and soil conditions’ influence on each single vine variety. Like an experimental plot it is an open air laboratory. The orographic variety of this microcosm in the Trapani countryside is a constant stimulus to Firriato’s staff as they forever strive to bring out the best of this land. Vines of the same variety have different ripening times as well as different grape budding times. These variables are fully conveyed in Charme Rosé. The red grapes in this blend balance together without hesitation offering an elegant and complex aromatic profile that conveys the identifying characteristics of their terroir of origin. The sparkling process does none other than add zest and pleasure to this wine’s drinkability, giving it a fresh and decisive flavour in the glass with the intensity and integrity of the characteristic aromas of these Sicilian red grape vine varieties.

The characteristics of vintages
2022
During 2022, thermal measurements showed constant homogeneity thanks to a winter with mild temperatures and the absence of frosts during the spring. The winter rains softened the soils and replenished the water reserves, while a sunny summer with limited humidity it prevented the spread of the main vine diseases, such as downy mildew and powdery mildew.
2021
The 2021 vintage in the Trapani countryside was characterized by a rather regular climatic trend during the budding-flowering phases (from early March to late May) and herbaceous growth of the berries, with mild temperatures and limited rains well distributed during the summer period.
2018
After a winter and a spring with abundant rainfall, summer did not make the thermometers soar and the sugar level was lower than in 2017. September recorded a slight increase in moisture and minimum temperatures compared to last year, but without ever causing particular phytosanitary problems. At the beginning of the third part of the same month there were copious rains (on the 21st and the 22nd) that slowed down the harvest, but fortunately without compromising the health of the grapes.
2017
Mild winter with appropriate moderate rainfalls and mild spring eased the regular vegetative process of the vines. Fortunately the lacking of precipitations over the springtime and the heat wave of the first part of June did not make plants undergo water stress. Broadly speaking this climate situation brought to a regular vegetative process and vines came to harvest time in extraordinary conditions. Among July and August temperature reached very high level compared to typical seasonal average.
2016
The summer season 2016 has been characterised by mild cimate, few rainfalls without excessive heat. After a winter characterised by few rainfalls, spring season began with cool temperatures lasted over flowering until the months of May and June when spring concluded with some rainfalls.These climatic conditions fostered a great vine life-cycle in the vineyard.
2015
Very complex in terms of weather, the heat and rain Fall 2014 resulted in the appearance of a significantly reduced spontaneous sward and characterized by the presence of species microthermal (those that adapt and grow at low temperatures). In late they turn out to be the most wild and cultivated plants seed. The start of winter was cold, with the strong reduction of sporigen due to the Spring 2014 greatly damp.
2014
It was an unforgettable vintage thanks largely to an almost uniform and very balanced climate, the spring was rightly rainy with cool summer which favoured ripening slow and gradual. There is talk of ” a summer without Scirocco wind”, July is spent without excessive heat. Parallel there were recorded temperature day/night very marked in all companies Firriato which helped the development of aromas and flavours.
2013
The year showed to be fruitful. Either regarding the quantity, and definitely regarding the quality “very interesting wines regarding the aromatic profile” had been obtained. Because of the climate, the harvest lasted till the last week of September. The year 2013 gave a slower harvest and then a gradual maturation.

Boiled Octopus
Wash the octopus thoroughly and place it in a pot with water. Add salt and bring to a boil. The octopus will be ready as soon as it is tender (check with a fork). The bigger the octopus, the longer the cooking time.
