The sandy soils of a volcanic origin are dark in colour. This chromatic trait of the soil allows it to absorb more heat during sunlight hours which then quickly escapes during the night leading to a great difference in temperature on this slope of the volcano.

The Classic Method on Etna: Rosé
The Etnean terroir with its mesoclimate and sandy soils of volcanic origin offers the ideal conditions for breeding the Nerello Mascalese. This vine, endemic to the volcano, naturally indulges in sparkling winemaking and the classic Firriato method thanks to the high levels of malic acidity. Thanks also to a low level of anthocyanins, from which the pale red color of the wine derives, it is possible to proceed with notable results to a sparkling rosé. After the manual harvest, a soft pressing of the whole grapes is carried out, skin maceration in the press for a short time, from one to two hours. The combination of the pedoclimatic characteristics of Etna, characterized by high temperature variations between day and night, by the exposure to sunlight typical of the Mediterranean area and by the richness of the soils, contribute to the development of grapes that are characterized by intensity aromas and aromatic finesse that are enhanced with the sparkling wine. Fruity hints of high intensity of strawberry and wild berries, light floral notes, especially violet. A sparkling wine balanced, with high structure, good acidity, with an extremely prolonged aromatic persistence. A classic rosé method that stands out on the national scene for the typicality of the native variety used, able to tell a unique terroir like that of Etna.
