Baglio Sorìa soil is characterised by mineral elements, clay and red marlstones and other rocks of Oligocene period. Red marlstones are the responsible of the structure of red wines of Baglio Sorìa estate.

Fruity Notes: a reward of a unique Terroir
An aromatic bouquet of wild red fruit is the key feature of this wine coming from the Trapani countryside. The vine is also grown in other parts of Sicily where the wine expresses spicy aromas. In the Baglio Sorìa estate the vine mostly expresses rounded flavour of red fruit. The high percentage of clay together with red marlstones presence influence the result in the wineglass, making these grapes absolutely unique in the Sicilian winescape. Interesting notes make this Frappato almost similar to Cerasuolo, ensuring extroardinary sips.

The characteristics of vintages
2019
The 2019 wine harvest was influenced by a wetter and cooler climate compared to previous years.
2016
The 2016 vintage stood out for its mild character, with little rainfall in winter, a spring characterized by cool temperatures and a summer season interspersed with few rains and without excessive heat peaks.This climatic situation favored an excellent performance of the various phenological phases of vineyards, especially during the flowering period.
2015
Complicated vintage, fall 2014 is characterized by hot weather and few rainfalls. These climate conditions caused the appearance of remarkably reduced natural turfing rich in microterms ( species growing thanks to low temperatures). Natural and cultivated seed plants seem to be in late. Winter beginning is cold with strong spore abatement due to the huge humidity of spring 2015.

Sift flours on a pastry board and realize a fountain. Put in the middle yolks and manually knead joining boiled and chopped spinach until anchieving a compact and smooth texture. Pour with some warm water to ease the knead. Make a ball, envelop with plastic wrap and transfer to the refrigerator.
