Nero d’Avola and Petit Verdot

Trapani countryside

The area of trapani countryside is one of the most suitable one for viticulture in Sicily. Soils are characterised by clay elements and there some areas where also red marlstones are present.

Narì

The Sicilinternational blend: Petit Verdot and Nero D'Avola

Petit Verdot is a grape variety coming from Médoc area, in France, where it is used for the production of Bordeaux, and is also widespread in California. In Italy, Petit Verdot manages to express itself in a truly excellent way especially in Sicily, where Firriato has enhanced it in its vineyards in the Trapani countryside. In this area, Firriato has practiced hillside viticulture since its foundation. The training systems are spurred cordon with Guyot pruning. High altimeters (400m above sea level) guarantee greater exposure to the sun and greater ventilation. Together with the frequent temperature fluctuations between day and night, a correct development of the plants, a gradual accumulation of aromas and optimal phytosanitary conditions for the vine are guaranteed. The fruit of this all-Sicilian Petit Verdot, gives pleasant surprises from year to year, developing a particular aromatic trait, typical of the grape reminiscent of pepper aromas.

The decision to blend with Nero D’Avola was due the intention of making something special: a super-native vine with an international one to create a wine fresh, complex but a the same time easy and esoteric. It’s clear since the first sip.

Nero D’Avola gives the wine the freshness, fruitness and some spicy aroma, Petit Verdot amplify this notes adding structure, a very well balanced tannins and deep red fruits.

Vintage

The 2019 vintage was generally affected by the colder and rainier climatic trend compared to the averages of recent years. Temperatures were below the seasonal average during the flowering period and favorable climatic conditions were also recorded during ripening. The vegetative development of the plants was optimal, with perfectly functioning foliage, and a reduction in the average weight of the bunch which favored an increase in the average quality. Over the ripening process there was an increase in the level of sugars and in the component of the precursors of the aromas in the grapes thanks to the strong temperature variations between day and night. These evidences attribute to the vintage characteristics of excellent balance between the olfactory (aromas) and taste (alcohol / freshness ratio) components.

Sicilian sardine and wild fennel pasta

Rinse the fish bones and trimmings of any blood. Chop leeks, quarter onion, cut carrots and celery stick and chop a peeled clove garlic. Brown onion, leeks and garlic in a stockpot with olive oil. Add vegetables and fish trimmings, season all with salt, pepper and chopped parsley. Leaving brown over some minutes in order to make fish stock tasty and cover with a 1 liter. Simmer for about 1 hour. At the end of cooking time, remove the stock from the heat and strain, discarding the fish trimmings and the vegetables.of water.
