Le Sabbie dell’Etna Bianco is a wine that is rightfully part of Firriato’s history. A pioneer label of Vulcan enology, a terroir completely different from the rest of Sicily, with its cold winters and less intense sunlight. The grapes enjoy slower ripening and the berries are enriched with their scents in a more linear way. Freshness and fragrance characterize this wine, along with the persistent savory line. Le Sabbie dell’Etna Bianco captivates for the olfactory and gustatory suggestions it brings as a dowry. The volcanic soil characterized by a high drainage capacity gives the grapes, and subsequently the later on to the wine, a peculiar minerality enriched by the aromatic dowry of the Carricante, which in vinification gives elegant nuances of white fruit.

The Cavanera Etnea Estate is located on the north-eastern slope of the Volcano. It is an area characterised by its young, predominantly sandy loam soil, which has a high drainage capacity and mineral content, including phosphorous, magnesium and potassium.

Etna and Carricante a thousand-year old union

The archaeologist Domenico Sestini is one of the first, in the 18th century, to speak of the origins of this vine born among the sandy lands of Etna.
The name Carricante probably derives from the dialect term “caricare,” referring to the remarkable productivity of this vine variety, capable of offering abundant harvests of grapes.
This productive aspect has made Carricante a much appreciated variety in the Sicilian wine scene, particularly on the slopes of the Volcano, where it finds its most authentic expression.
The wine obtained from Carricante grapes is distinguished by its finesse and elegance, its ability to evolve over time acquiring complexity and depth.

Place the tuna tartare in a bowl and season with salt, black pepper and extra virgin olive oil. For the fish tartare it is preferable to use an EVO oil. Also add grated lemon zest and chopped thyme.
