Zibibbo, Inzolia and other white aromatic grapes
The wide range of Firriato’s sparkling wines has enlarged with an elegant charmat method with a strong Sicilian identity. Zibibbo, a little bit of Inzolia and other native aromatic varietals growing in the kaleidoscopic mosaic of the Borgo Guarini estate, are harmoniously blended with the Martinotti method in order to offer an intese and delicate wine, fresh and pleasant on the palate. The varietal fragrances are nestled in an olfactory frame of flowery sensations, notes of jasmin, sage and white fruit. On the palate the sweetness never fills and the acidity level makes it absolutely unique. Its crown jewel is based on easy pearing: suitable for matching with dry pastries, but also with fruit; interesting to taste with some spicy cheese.

The hillside nature of the Borgo Guarini vineyards creates different soil and climate conditions according to the different heights at which they are located. Moving from one hill to another not only varies the chemical composition of the soil, but also the entire environment of soil and climate conditions. Wines produced on this estate evoke all the many nuances of this terroir.

The real and ideal life of the Count Saint Germain is a collection of incredible adventures, magic, tricks and legends. All these elements make him a fascinating and timeless character. He was born in 1712 and lived over the XVIII century ( if we do not have to use a plural form: according to people, it was not possible to make reference to a single person but a group of people, very similar to each other.

The Characteristics of the vintage
Mild winter with appropriate moderate rainfalls and mild spring eased the regular vegetative process of the vines. Fortunately the lacking of precipitations over the springtime and the heat wave of the first part of June did not make plants undergo water stress. Broadly speaking this climate situation brought to a regular vegetative process and vines came to harvest time in extraordinary conditions. Among July and August temperature reached very high level compared to typical seasonal average. Although this heat wave , the temperature fluctuations eased a good aromatic maturation of the grapes that had been harvested almost a week before but with a drop of production by 25%.%. Vintage 2017 climate conditions positively influenced native white grapes.
Mix the ricotta with the sugar until you get a thick and silky cream.
Wash strawberries under the running water, remove the petiole and cube fruit, holding some of it aside as a seal. Mix with the sugar until a smooth and homogeneous mixture is obtained.
