SLOW FOOD AWARDS FIRRIATO’S EXTRA VIRGIN ORGANIC OLIVE OIL

Among the vineyards of the Borgo Guarini and Baglio Sorìa estates there is a millennia-old natural garrison kindly guarding our men and their hard work in the fields. With their silvery branches, olive trees with mighty trunks twisted  by the centuries like sentinels observe the passing of time and bear witness of the history of Sicilian agriculture. They give beautiful green fruits of the Nocellara and Cerasuola varieties, typical of this area. The olives sprouting from these trees reach perfect ripeness between October and November to be  harvested and selected manually. The milling process takes place with stone roller pressing that does not alter the oil’s organoleptic characteristics, that reveals itself to the  palate with fruity and herbaceous notes.
