The archaeologist Domenico Sestini, in the 18th century, was the first to talk about the origins of this vine variety arising from the sandy soils of Castiglione di Sicilia. In addition to its etymological origins, linked to high yields and constant fruit production (between 5,600/5,800kg per hectare) we also learn from Sestini that, in the past, Carricante based wines were left to age on the lees inside the barrels to induce malolactic fermentation and soften its supporting acidity.
