Our Nerello Mascalese grapes are raised in the heart of the Etna DOC area. As soon as they are harvested, they get a soft pressing and go through temperature controlled fermentation with secondary fermentation in the bottle according to the classical method. The wine is aged in the bottle in contact with the lees for at least 32 months with frequent “coups de poignet” to enhance its olfactory complexity. A sparkling wine for a memorable New Year and a whispered invitation to elegance and joy.
